Here at the Swift House Inn in Middlebury, Vermont, we strive for excellence when it comes to everything we do, especially the food we serve. Misty Knoll Farms, founded in 1984, is family owned and operated by John Palmer and Rob Litch. Their goal and promise is to produce the finest naturally raised turkeys and chickens in Vermont. They strive to raise their turkeys and chickens in a stress-free environment with only the healthiest diet to produce the most flavorful birds possible. They allow their birds to roam free in un-crowded, spacious, specially designed enclosures, and only feed them whole grain that is free of antibiotics and animal by-products. The birds are processed on-site in Misty Knoll’s USDA-inspected facility.
Naturally grown birds may take longer to mature, but the resulting flavor is well worth it. The birds sustain less stress overall, and the result is healthy, nutritious, and flavorful birds that are robust and meatier. The poultry is all graded by hand to insure that only the finest birds are offered for sale. The chickens are processed each week and range from four to five pounds. Whole chickens and associated cuts are available year round. The available cuts are boneless breasts, legs, wings, bone-in breast, thigh, boneless thigh, drumstick, quartered chicken, and halved chicken. Turkeys are available fresh from September to December, ranging from 14 to 30 pounds. Frozen whole turkeys and associated cuts are available the remainder of the year. Available turkey cuts are boneless breast, cutlets, bone-in breast, ground turkey, leg, drumstick, thigh, and sausage.
John and Rob treat their farm with care and respect as a precious irreplaceable natural resource. They do everything they can to ensure the cropland will be accessible and fertile for future generations by following sustainable farming practices. They are members of the Vermont Fresh Network (VFN), and Rob is a VFN board member. The VFN is a state-wide organization dedicated to building innovative partnerships among Vermont farmers, chefs, and consumers to strengthen Vermont’s agriculture.

Visit the Swift House Inn’s on-site restaurant Jessica’s, and try chef Rob’s Tuscan Chicken entrée, featuring a Misty Knoll statler breast, cast iron roasted, with tomato and basil ragout, and olive tapenade, priced at $22.

Directions from the Swift House Inn: Head west on Stewart Lane and turn right onto US-7/North Pleasant Street at the traffic light. In 6 miles, turn right onto Town Hill Road. Follow Town Hill Road for 1.8 miles, and then turn right onto VT-17 East, and Misty Knoll Farms will be on your left in .3 miles. If you miss Town Hill Road, just continue on US-7 for about 1.7 miles, and then turn right onto VT-17 East at New Haven Junction. Follow VT-17 East for 1.6 miles, Misty Knoll Farms will be on your left.
